Wrapping up our January taco series with these delicious shredded chicken & corn salsa tacos using Celia’s corn tortillas 🌮🌽🥑
Ingredients
Celia's Corn Tortillas
Chicken breasts
White corn
Avocado
Goat cheese
Mayo
Cilantro
Jalapeño
Green onion
Sour cream
Taco sauce
Lime juice
Chili powder
Cumin
Garlic powder
Garlic salt
Salt
Pepper
Oil
Directions
Start by mixing oil, lime juice, chili powder, cumin, garlic powder, salt and pepper in a bowl.
Poke holes in your chicken breasts and marinate for 30 minutes.
Mix corn, mayo, lime juice, chili powder, cilantro, jalapeño, green onion, and garlic salt in a bowl to make corn salsa.
In a separate bowl, mix sour cream and taco sauce to make Mexican crema.
Cook and shred your chicken.
Cook your Celia's tortilla in oil.
Add your shredded chicken, corn salsa, sliced avocado, goat cheese, and Mexican crema
Top with cilantro and enjoy!
