EASY CHARRED TOMATO SALSA

makes 2 cups

1 pound of ripe tomatoes, plums or vine ripe      
¼ cup red onion, finely chopped                                      
1 jalapeno, minced                                                       
Juice of 1 lime                                                               
¼ bunch cilantro, chopped                                                         
Pinch cumin
2 TBSP olive oil
Kosher salt

Pepper

Next Steps:

Rub tomatoes with salt and 1 TBSP of oil


Grill tomatoes over high heat till charred


Chop tomatoes (you can use food processor if you are careful not to over process - you want some pieces)


Mix with all other ingredients

check the salt and pepper and adjust to your taste

QUESADILLA MIX

makes 3-4 quesadillas
½ onion, strips                                    
½ green pepper, strips                            

1 tomato, diced (canned tomatoes are fine)     
¼ bunch cilantro, chopped                             

 add salt and pepper
Squeeze of lime juice
Pinch garlic powder
Pinch or more Cumin
pinch of chipotle powder
Salt and pepper
 



 

Next Steps:

Saute onion and pepper till soft.


Add tomato and heat through


Pull from heat and add remaining ingredients


Put 4 oz basic mix and some cheddar/jack cheese mix in between two 6 inch tortillas and sauté with oil till browned

CREATIVE USES BEYOND THE TACO, BURRITO AND QUESADILLA

FIESTA ROLLS

 spread flour tortilla with cream cheese and top with a small amount of any ingredients and roll up then slice - use smoked salmon or salamis or grilled vegetables or chicken salad.
 

CRISPY STRIPS

 Roll flour tortillas then slice desired thickness (thicker is less breakable), deep fry and season.  Season with Cajun spices, crab seasoning, Mexican spices then garnish sandwich platters, soups, party trays. 

SALAD BOWLS

 deep fry with a large ladle holding the tortilla down to make a crispy salad bowl or use a small corn tortilla to make an edible sauce bowl for a nacho platter 

DESSERTS

 Apple pie filling in a cheese tortilla, warm and serve with caramel sauce and ice cream for a Mexican spin on the New England apple pie and cheddar cheese tradition.  
Cut flour tortillas into triangles, deep fry and dust with cinnamon sugar to make sugary crisps to garnish ice cream
Fill a flour tortilla with your favorite fruit, roll and seal with egg white, let dry and deep fry carefully to make a hot fruit chimichanga - dust with sugar once it comes out of the fryer.
